  • 4 c
    chopped rhubarb
  • 1 c
  • 1 box
    3 oz. strawberry gelatin
  • 1 pkg
    10 oz. miniature marshmallows
  • 1 box
    yellow cake mix

How to Make Rhubarb Upside Down Cake


  1. Preheat oven to 350*
  2. Spray 9x13 pan with cooking spray.
  3. Layer first four ingredients in pan - in order given.
  4. Mix cake mix according to package directions. Pour over ingredients in pan.
  5. Bake at 350* for 50-55 minutes or until cake tests done.
  6. Let stand for 5 to 10 minutes - turn out onto cookie sheet. Let cool completely.
  7. Serve with whipped cream or vanilla ice cream.
