It's almost rhubarb time, and we love anything made with rhubarb! This is a spice cake that is so great with ice-cream or lightly sweetened whipped cream!

Ingredients
- 2 cups all purpose flour
- 1 1/2 cups sugar
- 1/2 cup vegetable oil
- 1/3 cup water
- 1 1/4 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups finely chopped rhubarb
- 1 cup finely chopped nuts (i like pecans)
How To Make rhubarb spice cake

Step 1Heat oven to 350. Grease and lightly flour 9x13 pan.

Step 2In large bowl, beat flour, 1 1/4 C of the sugar and remaining ingrediwnts EXCEPT rhubarb, nuts and reserved 1/4 C sugar. Mix on low speed 1 minute, scraping bowl constantly. Beat on medium speed 2 minutes. Stir in rhubarb. Pour into prepared pan. Sprinkle with nuts and remaining 1/4 C sugar.

Step 3Bake 45-50 minutes, cool completely... serve with vanila ice-cream or sweetened whipped cream.
