My nephews have dubbed this the "GSD" (Good Stuff Dessert). It is a favorite in our family, and SOOOO easy!

Ingredients

  • 1 pkg
    yellow cake mix
  • 2 c
    rhubarb, sliced in 1/4 inch slices
  • 1 1/2 c
    granulated sugar
  • 1 3/4 c
    heavy whipping cream

How to Make Rhubarb Pudding Cake

Step-by-Step

  1. Heat oven to 350 degrees. Grease and flour a 9 X 13 cake pan.
  2. Prepare cake mix according to package directions. Pour batter into prepared cake pan.
  3. Evenly sprinkle rhubarb over cake batter.
  4. Sprinkle sugar evenly over rhubarb.
  5. Pour heavy cream evenly over sugar.
  6. Bake for 35 - 40 minutes, or til tests done when a toothpick inserted in the center, comes out clean.
  7. The rhubarb, sugar, and cream will sink to the bottom, forming a "pudding" layer beneath the cake layer. Delicious!
