Trying to think of new ways to use my rhubarb. This cake is so light and delicious.

Ingredients

  • 1/2 c
    butter or margarine
  • 1 1/2 c
    sugar
  • 2
    eggs
  • 1 c
    sour cream
  • 1 tsp
    vanilla
  • 2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 2 c
    finely chopped rhubarb
  • TOPPING

  • 1/2 c
    packed brown sugar
  • 1 Tbsp
    all purpose flour
  • 1 tsp
    cinnamon
  • 1 Tbsp
    butter or margarine softened
  • 1/2 c
    walnuts (optional)

How to Make Rhubarb Coffee Cake

Step-by-Step

  1. Preheat oven to 350. Cream butter and sugar. Add eggs one at a time. Stir in sour cream and vanilla.
  2. Mix flour and baking soda and fold into wet batter. Stir in rhubarb. Spread in a greased 13x9 pan. Mix topping all together and sprinkle over top.
  3. Bake for about 30-40 mins. or until toothpick comes out clean.
