Trying to think of new ways to use my rhubarb. This cake is so light and delicious.

Ingredients

  • 1/2 cup butter or margarine
  • 1 1/2 cups sugar
  • 2 - eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 2 cups finely chopped rhubarb
  • TOPPING
  • 1/2 cup packed brown sugar
  • 1 tablespoon all purpose flour
  • 1 teaspoon cinnamon
  • 1 tablespoon butter or margarine softened
  • 1/2 cup walnuts (optional)

How To Make rhubarb coffee cake

  • Step 1
    Preheat oven to 350. Cream butter and sugar. Add eggs one at a time. Stir in sour cream and vanilla.
  • Step 2
    Mix flour and baking soda and fold into wet batter. Stir in rhubarb. Spread in a greased 13x9 pan. Mix topping all together and sprinkle over top.
  • Step 3
    Bake for about 30-40 mins. or until toothpick comes out clean.
