Ingredients
- 1/2 cup butter or margarine
- 1 1/2 cups sugar
- 2 - eggs
- 1 cup sour cream
- 1 teaspoon vanilla
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 2 cups finely chopped rhubarb
- TOPPING
- 1/2 cup packed brown sugar
- 1 tablespoon all purpose flour
- 1 teaspoon cinnamon
- 1 tablespoon butter or margarine softened
- 1/2 cup walnuts (optional)
How To Make rhubarb coffee cake

Step 1Preheat oven to 350. Cream butter and sugar. Add eggs one at a time. Stir in sour cream and vanilla.

Step 2Mix flour and baking soda and fold into wet batter. Stir in rhubarb. Spread in a greased 13x9 pan. Mix topping all together and sprinkle over top.

Step 3Bake for about 30-40 mins. or until toothpick comes out clean.
