I have had this recipe for over 40 years. My mother gave the recipe to me so I could use the rhubarb that use to be in our yard. Brings back many happy memories of my family. Note: If you don't care for rhubarb or it is not available you can use tart chopped apples or blueberries instead.

Ingredients

  • 2 cups all purpose flour
  • 1 1/2 cups brown sugar, firmly packed
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1 - egg
  • 1/2 cup butter, softened
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1 1/2 cups rhubarb, chopped
  • TOPPING
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts

How To Make rhubarb coffee cake

  • Step 1
    Mix cake ingredients well and pour into a greased 9x13 pan. Combine topping ingredients and sprinkle over the cake batter. Bake at 350 degrees for 40 minutes.
