What a moist cake! The addition of coffee is unusual but enhances the flavors lovely. Bring this to your next potluck, and you'll be the hit of the party.

Ingredients

  • 2 cups sugar
  • 1 cup margarine
  • 1 cup black coffee
  • 3 to 4 cups fine cut rhubarb (about size of little fingernail)
  • 2 large eggs
  • 1 cup flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • TOPPING
  • 1/3 cup sugar
  • 1 small pkg chopped nuts

How To Make rhubarb cake

  • Step 1
    Cream together sugar, margarine, black coffee and rhubarb. Add 2 large eggs.
  • Step 2
    Sift flour, salt, baking soda and cinnamon. Combine with creamed ingredients. Pour into greased 13x9 baking dish.
  • Step 3
    Combine sugar and chopped nuts. Sprinkle topping over cake mixture.
  • Step 4
    Bake 350 for 45- 55 mins.
