  • 2 c
  • 1 c
  • 1 c
    black coffee
  • 3 to 4 c
    fine cut rhubarb (about size of little fingernail)
  • 2 large
  • 1 c
  • 1/2 tsp
  • 2 tsp
    baking soda
  • 2 tsp

  • 1/3 c
  • 1 small
    pkg chopped nuts

How to Make Rhubarb Cake


  1. Cream together sugar, margarine, black coffee and rhubarb. Add 2 large eggs.
  2. Sift flour, salt, baking soda and cinnamon. Combine with creamed ingredients. Pour into greased 13x9 baking dish.
  3. Combine sugar and chopped nuts. Sprinkle topping over cake mixture.
  4. Bake 350 for 45- 55 mins.
