How to Make Rhubarb Cake
1Preheat oven 350'
Mix flour, soda and salt. Set aside.
2In large bowl cream brown sugar and margarine until fluffy. On low speed beat in egg and vanilla. Mix flour mixture alternating with milk till all ingredients are well blended. Stir in rhubarb.
3Spray 9"x13" pan with cooking spray. Pour cake into pan. Mix sugar and cinnamon together. Sprinkle over the entire top of the cake.
4Bake for 40 minutes. Test with toothpick.
Can be served warm or cold. Serve with ice cream, whipped topping or my favorite--half and half.
