rhubarb cake
This cake brings back an old childhood memory , when my mother use to make this cake in the summer time every year. This cake is very good served warm or cold with whipped cream or vanilla ice cream. This is a borrowed picture from the net.

Ingredients
- 2 cups rhubarb ; diced
- 1/2 cup granulated sugar
- 1/2 cup shortening
- 1 1/2 cups granulated sugar
- 1 - egg
- 2 cups flour
- 1 teaspoon baking soda
- 1 dash salt
- 1 teaspoon cinnamon
- 1 cup sour milk
- 1 teaspoon vanilla extract

How To Make rhubarb cake

Step 1Mix the diced rhubarb together with the 1/2 cup sugar ; set aside until the cake batter is all mixed up.

Step 2Mix up the remaining ingredients to form the cake batter.

Step 3Add the rhubarb mixture just before putting in the oven.

Step 4Sprinkle cake with cinnamon and sugar mixture.

Step 5Bake @ 350 deg. for 1 hour.
