I recently got this recipe from my cousin and made it for the first time today. Have not tasted it yet, but she says it is great.

Ingredients

  • 1 1/2 cups brown sugar, lightly packed
  • 1/2 cup shortening
  • 2 - eggs
  • 3/4 cup milk
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups chopped rhubarb

How To Make rhubarb cake

  • Step 1
    Preheat oven to 350 degrees. Grease and flour a 9 X 9 pan. Mix together the shortening and brown sugar. Add the eggs and milk & mix well.
  • Step 2
    Add the dry ingredients and mix well. Pour into prepared pan. Sprinkle the following topping over the mixture: TOPPING: 1/2 cup sugar 1/2 tsp. cinnamon 1/2 cup coconut Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
