I recently got this recipe from my cousin and made it for the first time today. Have not tasted it yet, but she says it is great.

  • 1 1/2 c
    brown sugar, lightly packed
  • 1/2 c
  • 2
  • 3/4 c
  • 2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
  • 1 tsp
    vanilla extract
  • 2 c
    chopped rhubarb

How to Make Rhubarb Cake


  1. Preheat oven to 350 degrees. Grease and flour a 9 X 9 pan. Mix together the shortening and brown sugar. Add the eggs and milk & mix well.
  2. Add the dry ingredients and mix well. Pour into prepared pan. Sprinkle the following topping over the mixture:
    1/2 cup sugar
    1/2 tsp. cinnamon
    1/2 cup coconut

    Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
