Ingredients
- 1 1/2 cups brown sugar, lightly packed
- 1/2 cup shortening
- 2 - eggs
- 3/4 cup milk
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups chopped rhubarb
How To Make rhubarb cake

Step 1Preheat oven to 350 degrees. Grease and flour a 9 X 9 pan. Mix together the shortening and brown sugar. Add the eggs and milk & mix well.

Step 2Add the dry ingredients and mix well. Pour into prepared pan. Sprinkle the following topping over the mixture: TOPPING: 1/2 cup sugar 1/2 tsp. cinnamon 1/2 cup coconut Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
