RHUBARB CAKE

This is an excellent and easy cake. Even great as a breakfast coffee cake.

Ingredients

  • 1/2 c
    margerine or butter
  • 1 1/2 c
    brown sugar
  • 2
    eggs
  • 2 c
    flour
  • 1/2 tsp
    salt
  • 1 tsp
    baking soda
  • 1/2 c
    milk
  • 2 tsp
    vanilla extract
  • 2 c
    fresh or frozen rhubarb diced fine
  • 1/2 c
    white sugar
  • 1 tsp
    cinnamon

How To Make

  • 1
    Cream shortening, sugar, eggs; then alternate dry ingredients with milk. Add vanilla and rhubarb. Mix well, pour into a greased 9 x 13 inch cake pan. Sprinkle the top of batter with 1/2 cup white sugar and 1 tsp cinnamon mixed. Bake at 350F for 30 - 35 minutes.
