I wish Rhubarb grew year round so I could make this anytime!

Ingredients

  • 1/2 cup butter, softned
  • 1 1/2 cups brown sugar
  • 2 - eggs
  • 1 cup sour cream
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 2 cups chopped, raw, rhubarb
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon

How To Make rhubarb cake

  • Step 1
    Mix in order given, folding in the 2 cups of rhubarb last. Pour into a greased 9x13 pan. Top with mixture of sugar and cinnamon before baking. Bake 350 degrees for 30 minutes or until toothpick comes out clean.
