Ingredients

milk
1 Tbsp
fresh lemon juice
1 tsp
pure vanilla extract
1 1/2 c
brown sugar
2/3 c
vegetable oil
1 large
egg
2 1/2 c
flour
1 tsp
salt
1 tsp
baking soda
1 1/2 c
chopped rhubarb
1/2 c
chopped walnuts
1/4 c
brown sugar
1/2 tsp
cinnamon
1 Tbsp
butter, melted

How to Make RHUBARB BREAD

Step-by-Step

  • 1Preheat oven to 325. Lightly grease 2 9x5 loaf pans. Stir together milk, lemon juice, and vanilla. Let stand 10 minutes.
  • 2Mix brown sugar, oil and egg together. Combine flour, salt and baking soda and stir into sugar mixture alternating with milk mixture until combined.
  • 3Fold in rhubarb and walnuts. Pour into pans. Combine 1/4 brown sugar, cinnamon and butter. Sprinkle over loaves.
  • 4Bake 40 minutes or til done.
