Ingredients
- 1 cup milk
- 1 tablespoon fresh lemon juice
- 1 teaspoon pure vanilla extract
- 1 1/2 cups brown sugar
- 2/3 cup vegetable oil
- 1 large egg
- 2 1/2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 cups chopped rhubarb
- 1/2 cup chopped walnuts
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon butter, melted
How To Make rhubarb bread

Step 1Preheat oven to 325. Lightly grease 2 9x5 loaf pans. Stir together milk, lemon juice, and vanilla. Let stand 10 minutes.

Step 2Mix brown sugar, oil and egg together. Combine flour, salt and baking soda and stir into sugar mixture alternating with milk mixture until combined.

Step 3Fold in rhubarb and walnuts. Pour into pans. Combine 1/4 brown sugar, cinnamon and butter. Sprinkle over loaves.

Step 4Bake 40 minutes or til done.
