"Refrigerator" Cake

I came across this recipe in one of my cookbooks from a local church around here. It's very different then your average cake....but so good! Anything with pineapple is good to me.....I love pineapple!

    2 c. crushed pineapple
  • ·
    1/2 cup sugar
  • ·
    1/2 cup pecans
  • ·
    1/4 cup butter, melted
  • ·
    1 tsp. vanilla
  • ·
    3 cups crushed nilla wafers

How to Make "Refrigerator" Cake


  1. Place a layer of crushed wafers in a greased refrigerator dish.
  2. Cover wafers with a layer of mixture.
  3. Add another layer of wafers.
  4. Top with more mixture.
  5. Ending with wafer crumbs on top.
  6. Place in refrigerator for a day or longer.
  7. *Note*
    Serve with cool whip or ice-cream, and a cherry on top.

    You may substitute nilla wafers for graham crackers.
