Ingredients

  • 21/2 cups flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1 teaspoon red dye
  • 3/4 cup butter, room temperature
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, room temperature
  • 8 ounces cream cheese, room temperature
  • 1 teaspoon vanilla extract
  • 3 cups confectioners' sugar

How To Make red velvet whoopie pies with a cream cheese icing.

  • Step 1
    Preheat oven to 375 degrees then sift together 2 1/4c flour, 1/4c coco, 1/2t powder, 1/2t baking soda, 1/4 salt and set aside. Portion out 3/4c buttermilk and 1T red dye and set aside. Paddle together in the mixer 3/4c room temp butter until smooth, then add 1c sugar until creamy, next add 1 egg and 1t vanilla until incorporated. Mix and alternate dry ingredients with the wet until it all comes together. Spoon with a small ice cream scoop onto a greased baking sheet and bake for 12 to 15 mins depending on size.
  • Step 2
    For the icing you will need...1/2c butter room temp, 8 ounces cream cheese, 3c confectioners sugar and 1t vanilla. Cream it together in a mixer and spread it on.
