red velvet whoopie pies
I love makin whoopie ... pies, that is! I made these 4 Christmas last yr and added green food coloring 2 the cream cheese frosting! Not only were they delicious, but also beautiful and festive as well as simple.

Ingredients
- 1-1lb 1.5 ounces pouch of sugar cookie mix
- 1/3 cup unsweetened cocoa powder
- 1/4 cup butter softened
- 1/4 cup sour cream
- 1 teaspoon red food coloring
- 1 - egg
- 1/4 cup butter softened for frosting
- 4 ounces cream cheese softened for frosting
- 2 cups confectioners' sugar for frosting
- 1 teaspoon vanilla extract for frosting
How To Make red velvet whoopie pies

Step 1Mix cookie mix, cocoa, butter, sour cream, food color and egg in bowl until soft dough forms.

Step 2Drop cookie dough onto ungreased cookie sheet 2 inches apart with a cookie scoop

Step 3Bake at 375 degrees F for 8 to 9 minutes or until set. Cool 2 minutes; remove from cookie sheet to wire rack. Cool completely, about 15 minutes.

Step 4While cookies are cooling, make frosting. Mix butter, cream cheese, confectioners sugar and vanilla extract until smooth.

Step 5When cookies are completely cooled, assemble whoopie pies by putting frosting on the flat side of a cookie and sandwiching another flat cookie bottom against the exposed frosting. It should look like a little sandwich, like in the picture.

Step 6Enjoy with a tall glass of milk :-)
