Fern lived next door to us when I was a carpet muncher in Eureka, MI. She made this raisin cake and shared with all of us girls. I can remember going next door for this snack cake and the walk through the snow being worth it!

Ingredients

RAISIN MIXTURE

1 c
raisins
2 c
water

BATTER

1 stick
butter
1 c
sugar
2 c
flour
1 tsp
baking soda
1 tsp
cinnamon
1 tsp
ground cloves
1 tsp
allspice
1 tsp
nutmeeg
1/4 tsp
salt
1
beaten egg
1/2 c
nuts

How to Make Raisin Nut Squares

Step-by-Step

  • 1Boil raisins for 10 minutes. Add butter and remove from the stove. Set and cool 10 minutes.
  • 2Combine dry ingredients and add rasin mixture and mix well with spoon. Add beaten egg and mix well. Add nuts if desired.
  • 3Pour into greased 1/2 sheet pan (10" by 14"). Bake at 350 degrees for 30 to 35 minutes. You may wish to use less of the spices at first but is best with a bit of spiceness. Glaze with a powdered sugar frosting when warm.
