My Mother-in law made this cake in the winter. It was my husbands'favorite.This was originally known as " Waldorf War Cake" as it was baked during WWI, when there was a shortage of granulated sugar and eggs.My husband liked chocolate icing, I like vanilla icing. They are both good.This cake is baked at 300 degrees

Ingredients

  • 2 c
    frimly packed brown sugar
  • 2 Tbsp
    shortening
  • 2 c
    plus 1 teaspoon hot water divided
  • 2 c
    raisins
  • 1 tsp
    salt
  • 1 tsp
    cinnamon, ground
  • 1/4 tsp
    cloves ground
  • 1 tsp
    baking soda
  • 3 c
    all purpose flour

How to Make Raisin Cake

Step-by-Step

  1. Combine brown sugar, shortening, 2 cups of hot water, raisins, salt, cinnamon and cloves in a medium saucepan;Bring to boil over medium heat.
  2. Reduce heat;simmer for 5 minutes.Remove from heat;cool completely
  3. Dissolve soda in 1 teaspoon hot water; add with flour to cold raisin mixture.
  4. Pour batter into a greased 13"x9" baking pan
  5. Bake at 300 degrees for 45 minutes or until tests done.
