quick pineapple cake and icing

Love this cake great for a hot summer day with a glass of iced tea. Trick is to make it and put it in the fridge to get it really cold. I personally like it the longer it sits.

- 2 teaspoons baking soda
- 2 cups all purpose flour
- 2 cups sugar
- 1/2 cup buttermilk
- 20 ounces crushed pineapple juice included
- 1 teaspoon vanilla extract
- 2 large eggs slightly beaten
- 1/2 cup chopped pecans
- 1/2 cup coconut
- ICING:
- 8 ounces cream cheese, room temperature
- 1/2 cup butter soften
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
How To Make quick pineapple cake and icing

Step 1Preheat oven to 350 and spray a 9x13 pan with baking spray. Cake: Sift together soda and flour Do not skip this step it does make a difference. Mix the sugar , pineapple with juice, buttermilk, eggs , pecans, coconut and vanilla with wooden spoon (no need for mixer) Stir in sifted flour mixture until combined. Poor in prepared pan and bake 25-30 minutes.

Step 2Icing Cream all ingredients together and poor over the cake while still warm, refrigerate until cold.
