My daughter gave me this delicious, easy to prepare, Mini Pumpkin Bites recipe. They are perfect for any fall desserts. Kids and adults love them.. You just can't eat one. Yummy !

1 box yellow cake mix
1 15 oz. can pumpkin
1/2 cup veg. oil
1 tsp. baking soda
2 tsp. cinnamon
3 eggs
cream cheese can icing

How to Make Quick and Easy Pumpkin Bites


  • 1Mix all ingredients with mixer. Line mini muffin cups with cupcake papers. Fill each cup 3/4 full.
    Bake 15 minutes - 350 degrees.
  • 2When muffins are cooled. Open Pillsbury or Betty Crocker Cream Cheese can Icing and put in a zip top sandwich bag (cut small slit on corner of bag( or pastry bag ( with decorating tip) and decorate the pumpkin bites.
