My daughter gave me this delicious, easy to prepare, Mini Pumpkin Bites recipe. They are perfect for any fall desserts. Kids and adults love them.. You just can't eat one. Yummy !

Ingredients

  • ·
    1 box yellow cake mix
  • ·
    1 15 oz. can pumpkin
  • ·
    1/2 cup veg. oil
  • ·
    1 tsp. baking soda
  • ·
    2 tsp. cinnamon
  • ·
    3 eggs
  • ·
    cream cheese can icing

How to Make Quick and Easy Pumpkin Bites

Step-by-Step

  1. Mix all ingredients with mixer. Line mini muffin cups with cupcake papers. Fill each cup 3/4 full.
    Bake 15 minutes - 350 degrees.
  2. When muffins are cooled. Open Pillsbury or Betty Crocker Cream Cheese can Icing and put in a zip top sandwich bag (cut small slit on corner of bag( or pastry bag ( with decorating tip) and decorate the pumpkin bites.
