I love carrot cake and this is a quick fix.I like a plain carrot cake,no nuts in the cake or pineapple for me,but if you like it that way,by all means add them to this recipe.

- - 1 1/2 cups grated carrots
- - 3 eggs
- - 1/3 cup oil
- - 1 1/3 cup water
- - your favorite cream cheese frosting
- - chopped pecans,optional
How To Make quick and easy carrot cake

Step 1Preheat oven to 350 deg. Make and bake cake mix according to the package,baking 2 8 or 9 inch cakes. Cool in pans 10 mins. Remove from pans and cool completely on a wire rack. Frost cake with cream cheese frosting and decorate with chopped pecans on top.
