pumpkin spice whoopies

For those of you who have never heard of whoopie pies before, let me just explain quickly. they are 2 cakes with a cream filling in the middle.. Easy enuf right? Now let your imaginations go wild...This one is my nod to fall..with pumpkin. ENJOY.

Ingredients
- WHOOPIES
- 1 cup canned pumpkin
- 1/3 cup butter, softened
- 1 package spice cake mix
- 2 large eggs
- 1/2 cup milk
- FILLING
- 1 package cream cheese, softened..8 oz.
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1/2 jar marshmallow cream
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
How To Make pumpkin spice whoopies

Step 1preheat oven to 375 degrees. Line a cookie sheet with parchment paper or foil. If using foil, grease. In a large mixing bowl combine pumpkin and butter and beat on medium speed until smooth with a mixer.

Step 2Add cake mix, eggs, and milk, beat on low speed until combined. Beat on medium speed for one minute. Drop mounds of batter by heaping tablepoonsful, 3 inches apart on cookie sheet. Keep remaining batter chilled.

Step 3Bake for fifteen minuttes or until set and lightly browned around the edges. Cool on a wire rack. Repeat with remaining batter.

Step 4In a medium bowl combine cream cheese and butter. Beat on medium speed until smooth. Add remaining filling ingredients and beat until well blended. Spread about 2.5 Tablespoons of filling on the flat side of a whoopie and top with the second whoopie. Store in an airtight container..makes about fifteen sandwhiches.
