*pumpkin spice cupcakes with candied pecans*

Found this recipe and tweaked it to my liking. Hope you enjoy!

Ingredients

  • CANDIED PECANS
  • 1/2 cup pecans, chopped
  • 3 tablespoons sugar
  • CUPCAKES
  • 1 box yellow cake mix
  • 1 cup canned pumpkin (not pie mix)
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 4 - eggs
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 can cream cheese frosting

How To Make *pumpkin spice cupcakes with candied pecans*

  • Step 1
    Heat oven to 350 degrees.
  • Step 2
    In a non-stick skillet, cook pecans and 2 tablespoons sugar on low heat, stirring constantly, for about 8 minutes. Spread pecans on wax paper and sprinkle with remaining sugar. Toss and set aside.
  • Step 3
    In a large bowl, beat together cake mix, water, oil, pumpkin, eggs and pumpkin pie spice with electric mixer 30 seconds on low speed, then medium for 2 minutes.
  • Step 4
    Put baking cups in each 24 regular size muffin cups. Divide mix evenly among cups (2/3 full). Bake 20-24 minutes. Cool completely and frost. Sprinkle pecans onto frosting and press in lightly.
