*Pumpkin Spice Cupcakes with Candied Pecans*

  • 1/2 c
    pecans, chopped
  • 3 Tbsp

  • 1 box
    yellow cake mix
  • 1 c
    canned pumpkin (not pie mix)
  • 1/2 c
  • 1/3 c
    vegetable oil
  • 4
  • 1 1/2 tsp
    pumpkin pie spice
  • 1 can(s)
    cream cheese frosting

How to Make *Pumpkin Spice Cupcakes with Candied Pecans*


  1. Heat oven to 350 degrees.
  2. In a non-stick skillet, cook pecans and 2 tablespoons sugar on low heat, stirring constantly, for about 8 minutes. Spread pecans on wax paper and sprinkle with remaining sugar. Toss and set aside.
  3. In a large bowl, beat together cake mix, water, oil, pumpkin, eggs and pumpkin pie spice with electric mixer 30 seconds on low speed, then medium for 2 minutes.
  4. Put baking cups in each 24 regular size muffin cups. Divide mix evenly among cups (2/3 full). Bake 20-24 minutes. Cool completely and frost. Sprinkle pecans onto frosting and press in lightly.
