I am in love with all things pumpkin. My friends and my husband love when I make this cake. It makes the house smell wonderful and it tastes just as good! I hope you come to love it as much as we have!

Ingredients
- 2 cups sugar
- 3/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups canned pumpkin
- 4 - eggs
- 2 cups all purpose flour
- 1/2 cup applesauce
- 3 teaspoons baking powder
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cloves
- 1 1/2 teaspoons nutmeg
- 1/4 teaspoon ground ginger
- 1 teaspoon allspice, ground
How To Make pumpkin spice cake

Step 1Preheat the oven to 350. Grease and flour a 12 X 18 in. pan - I prefer to use a bundt pan and I spray the inside of the pan with Baker's Joy.

Step 2In a medium size bowl, sift together: flour, baking powder, baking soda, salt, cinnamon, cloves, nutmeg, allspice, and ginger. Set aside.

Step 3In a large bowl, combine sugar and oil.

Step 4Blend in vanilla, applesauce, and pumpkin until smooth.

Step 5Once blended, beat in each egg - one at a time. Gradually beat in your flour mixture.

Step 6Spread batter into the pan. Bake for 30 minutes(12x18pan) - 45/50 minutes (bundt pan) or until a toothpick inserted comes out clean. Allow the cake to cool. Cover with your favorite topping. (We like to use cinnamon and sugar to sprinkle over the top of the cake.)

Step 7Also makes 28 muffins - 3/4 full ~ bake for 18-20 minutes. You can substitute the pumpkin with 2 cups of unsweetened apple butter for an apple spice cake.
