i use melted margarine instead of the oil...i thought the margarine made this moister...i've made them with both... and this recipe came from a resident at the Nursing Home i work at...

Ingredients

2 cups sugar
2 cups flour
1 can pumpkin...(15 oz.)
1 cup oil or margarine...(melted)
2 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt

How To Make pumpkin sheet cake

Step 1

heat oven to 350 degrees.... mix well...grease a sheet cake pan and bake for 25 minutes or till tooth pick comes out clean...

Step 2

Cream Cheese Frosting 1 8oz.cream cheese 1 stick butter(soft) 1 teaspoon vanilla...beat well: add 2 cups powder sugar recipe called for 3 but i think 2 cups of the sugar works fine...top with chopped pecans if u wish...
