This Pumpkin Roll is delicious and I make it every Thanksgiving. Enjoy

Ingredients

  • 1 cup sugar
  • 3 - eggs beaten
  • 2/3 cup canned pumpkin (not pie mix)
  • 3/4 cup flour all purpose
  • 1 tsp - salt
  • 1 tsp - cinnamon
  • 1 tsp - baking soda
  • 3/4 cup chopped pecans
  • 1 - 8 oz - cream cheese softened
  • 1 tsp - vanilla
  • 2 tbs - margarine softened
  • 1 cup sifted powdered sugar

How To Make pumpkin roll

  • Step 1
    Preheat oven to 375. Mix sugar, eggs, and pumpkin in a bowl. Sift flour, salt, cinnamon and soda in another bowl. Combine flour and pumpkin mixture. Grease a rimmed baking sheet with oil (I spray) and line with sprayed wax paper. ( I use a jelly roll pan) Extend paper over sides of baking sheet. Pour batter in and spread out and sprinkle with pecans.(optional) Bake for 15 minutes. For filling, beat cream cheese and vanilla, margarine and powdered sugar until smooth and creamy. Sprinkle a dishtowel with powdered sugar,flip cooked batter face down on towel. Remove wax paper. Roll loosely(with towel) and let set until cooled. Unroll cake, Spread with filling (1/2 inch from edges)Roll again (without the towel). Wrap and freeze. Unwrap and slice while frozen.
