This is a really nice recipe and oh so yummy. Perfect for the holidays coming! I borrowed this from the website -howdoesshe.com by Heather.

Ingredients

  • 1 cup sugar
  • 1 teaspoon baking soda
  • 3/4 cup all purpose flour
  • 2/3 can pumpkin puree
  • 2 - eggs
  • 1/2 teaspoon cinnamon
  • 1/2 cup walnuts or pecans, chopped small, optional
  • FILLING
  • 8 ounces cream cheese
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons butter, softened

How To Make pumpkin roll recipe

  • Step 1
    Mix everything except nuts Cover cookie or jelly roll pan with piece of wax paper and make sure you grease well with butter. Pour batter onto well greased wax paper in jelly roll pan & sprinkle nuts (if using) either on top of batter or wait and you can sprinkle nuts at time of spreading your filling. Bake at 375F degrees in oven
  • Step 2
    Once you remove your cake from the oven you need to turn it over or 'flip it onto another flat surface' ie: cookie sheet with a cotton towel in it and carefully remove the wax paper from the cake.
  • Step 3
    Roll carefully back into towel to cool for about 10 minutes. Unroll carefully after short cooling period & spread in filling and nuts if you use them at that time then reroll cake`
