I'VE BEEN MAKING THIS FOR YEARS FOR CHRISTMAS. IT'S A MUST HAVE. DON'T LET THE DIRECTIONS SCARE YOU IT'S NOT THAT HARD TO MAKE

Ingredients

  • 3 - eggs
  • 2/3 cup pumpkin puree
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon lemon juice
  • 1 cup sugar
  • 3/4 cup self rising flour
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla
  • 8 ounces cream cheese at room temp
  • 1/2 stick butter at room temp
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla

How To Make pumpkin roll

  • Step 1
    Preheat oven to 350 degrees. Spray a large cookie sheet with sides with cooking spray, place a sheet of wax paper down and spray wax paper. Set aside.
  • Step 2
    Mix first 9 ingredients in a large bowl until well mixed. Pour onto greased wax paper and bake at 350 degrees for 15 minutes or until toothpick comes out clean.
  • Step 3
    When cake is done spray another sheet of wax paper and place on top of done cake. invert onto a thick towel. While cake is still warm not hot roll into a roll and set aside until completely cool
  • Step 4
    Mix cream cheese, butter, vanilla,and powder sugar until blended well.
  • Step 5
    Unroll cake remove wax paper add filling and roll back up removing bottom wax paper as you go.
