Ingredients

3
eggs
2/3 c
pumpkin puree
2 tsp
cinnamon
1 tsp
ginger
1 tsp
lemon juice
1 c
sugar
3/4 c
self rising flour
1/2 tsp
nutmeg
1 tsp
vanilla
8 oz
cream cheese at room temp
1/2 stick
butter at room temp
1 c
powdered sugar
1/2 tsp
vanilla

How to Make PUMPKIN ROLL

Step-by-Step

  • 1Preheat oven to 350 degrees. Spray a large cookie sheet with sides with cooking spray, place a sheet of wax paper down and spray wax paper. Set aside.
  • 2Mix first 9 ingredients in a large bowl until well mixed. Pour onto greased wax paper and bake at 350 degrees for 15 minutes or until toothpick comes out clean.
  • 3When cake is done spray another sheet of wax paper and place on top of done cake. invert onto a thick towel. While cake is still warm not hot roll into a roll and set aside until completely cool
  • 4Mix cream cheese, butter, vanilla,and powder sugar until blended well.
  • 5Unroll cake remove wax paper add filling and roll back up removing bottom wax paper as you go.
