Ingredients
- 3 - eggs
- 2/3 cup pumpkin puree
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 1 teaspoon lemon juice
- 1 cup sugar
- 3/4 cup self rising flour
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla
- 8 ounces cream cheese at room temp
- 1/2 stick butter at room temp
- 1 cup powdered sugar
- 1/2 teaspoon vanilla
How To Make pumpkin roll

Step 1Preheat oven to 350 degrees. Spray a large cookie sheet with sides with cooking spray, place a sheet of wax paper down and spray wax paper. Set aside.

Step 2Mix first 9 ingredients in a large bowl until well mixed. Pour onto greased wax paper and bake at 350 degrees for 15 minutes or until toothpick comes out clean.

Step 3When cake is done spray another sheet of wax paper and place on top of done cake. invert onto a thick towel. While cake is still warm not hot roll into a roll and set aside until completely cool

Step 4Mix cream cheese, butter, vanilla,and powder sugar until blended well.

Step 5Unroll cake remove wax paper add filling and roll back up removing bottom wax paper as you go.
