This is a must for the Holidays if you love pumpkin rolls. It will disappear fast so you better put a piece back for yourself for later.

Ingredients

  • 3/4 cup pumpkin (natural)
  • 1 teaspoon vanilla
  • 2/3 cup self-rising flour
  • 1 cup sugar
  • 3 - eggs
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 package 8 oz. cream cheese
  • 1 small 8 oz. bowl cool whip

How To Make pumpkin roll

  • Step 1
    cake: mix flour and pumpkin well, add sugar, eggs, mix well, and then add the vanilla
  • Step 2
    icing: put softened cream cheese into mixer, add cool whip, mix well, add the powdered sugar a little at a time and add the tsp. of vanilla last
  • Step 3
    pour 1/2 cake mixture on wax paper on a cookie sheet sprayed with nonstick spray then bake at 325 for 15-20 minutes, let it cool
  • Step 4
    ice the cool cake well, then start to roll up pumpkin roll and the wax paper will separate easily from the cake easy as you roll it up
  • Step 5
    I like to put extra icing on the outside and top with pecan pieces
