This is a must for the Holidays if you love pumpkin rolls. It will disappear fast so you better put a piece back for yourself for later.

Ingredients

3/4 c
pumpkin (natural)
1 tsp
vanilla
2/3 c
self-rising flour
1 c
sugar
3
eggs
1/2 c
powdered sugar
1 tsp
vanilla
1 pkg
8 oz. cream cheese
1 small
8 oz. bowl cool whip

Step-By-Step

1cake: mix flour and pumpkin well, add sugar, eggs, mix well, and then add the vanilla
2icing: put softened cream cheese into mixer, add cool whip, mix well, add the powdered sugar a little at a time and add the tsp. of vanilla last
3pour 1/2 cake mixture on wax paper on a cookie sheet sprayed with nonstick spray then bake at 325 for 15-20 minutes, let it cool
4ice the cool cake well, then start to roll up pumpkin roll and the wax paper will separate easily from the cake easy as you roll it up
5I like to put extra icing on the outside and top with pecan pieces
