Ingredients
- 3/4 cup pumpkin (natural)
- 1 teaspoon vanilla
- 2/3 cup self-rising flour
- 1 cup sugar
- 3 - eggs
- 1/2 cup powdered sugar
- 1 teaspoon vanilla
- 1 package 8 oz. cream cheese
- 1 small 8 oz. bowl cool whip
How To Make pumpkin roll

Step 1cake: mix flour and pumpkin well, add sugar, eggs, mix well, and then add the vanilla

Step 2icing: put softened cream cheese into mixer, add cool whip, mix well, add the powdered sugar a little at a time and add the tsp. of vanilla last

Step 3pour 1/2 cake mixture on wax paper on a cookie sheet sprayed with nonstick spray then bake at 325 for 15-20 minutes, let it cool

Step 4ice the cool cake well, then start to roll up pumpkin roll and the wax paper will separate easily from the cake easy as you roll it up

Step 5I like to put extra icing on the outside and top with pecan pieces
