Ingredients

3/4 c
pumpkin (natural)
1 tsp
vanilla
2/3 c
self-rising flour
1 c
sugar
3
eggs
1/2 c
powdered sugar
1 tsp
vanilla
1 pkg
8 oz. cream cheese
1 small
8 oz. bowl cool whip

How to Make Pumpkin Roll

Step-by-Step

  • 1cake: mix flour and pumpkin well, add sugar, eggs, mix well, and then add the vanilla
  • 2icing: put softened cream cheese into mixer, add cool whip, mix well, add the powdered sugar a little at a time and add the tsp. of vanilla last
  • 3pour 1/2 cake mixture on wax paper on a cookie sheet sprayed with nonstick spray then bake at 325 for 15-20 minutes, let it cool
  • 4ice the cool cake well, then start to roll up pumpkin roll and the wax paper will separate easily from the cake easy as you roll it up
  • 5I like to put extra icing on the outside and top with pecan pieces
