"pumpkin patch" pumpkin spice cake

I made this pretty cake for my hubby to come home to after his last business trip. He loved it!! Since it was a pumpkin spice cake, I decorated it to look like a pumpkin patch! Bet Linos and Charlie Brown would love it, too! ;) Enjoy!! :D

Ingredients For "pumpkin patch" pumpkin spice cake

  • CAKE:
  • 1/2 cup
    unsalted butter, room temp
  • 1 1/4 cups
    light or dark brown sugar, i use dark
  • 2
    large eggs
  • 1 cup
    solid pack pumpkin, about half of a 15 oz. can
  • 1 tsp.
    vanilla
  • 2 cups
    sifted cake flour, sift first then measure
  • 1/4 tsp.
    baking powder
  • 1 tsp.
    baking soda
  • 1/2 tsp.
    salt
  • 2 tsp.
    cinnamon
  • 1/2 tsp.
    nutmeg
  • 1/4 tsp.
    ground ginger
  • 1/8 tsp.
    ground cloves
  • 1/2 cup
    buttermilk
  • 1/2 cup
    applesauce
  • CREAM CHEESE FROSTING:
  • 8 oz.
    cream cheese, room temp
  • 1/4 cup
    unsalted butter, room temp
  • 1 Tbl.
    good maple syrup
  • 5-6 cups
    powdered sugar, sifted, as much or little as needed

How To Make "pumpkin patch" pumpkin spice cake

    In large bowl of mixer, beat beat butter and sugar til light and fluffy, 2-3 minutes. Add eggs, one at a time, mixing well after each addition. Scrape down sides of bowl as needed. Add pumpkin pureeand vanilla and beat til mixed. In a seperate bowl, whisk flour, soda, baking powder, salt and spices. Add flour mixture, buttermilk and applesauce alternately to batter in 3 additions starting and ending with the flour mixture. Pour batter into 2 greased and floured 8" cake pans. Bake for 25-30 minutes or til a toothpick comes out clean when tested in the center. Cool 10 minutes, then turn cakes out onto racks to cool completely before frosting.

    For Frosting: Mix butter, cream cheese and maple syrup til mixed. Slowly add in powdered sugar til you have the right consistency. If it gets too stiff, just add a little more maple syrup. If it's too thin, add more powdered sugar. Frost and decorate! :D (Refrigerate.)
