How to Make Pumpkin Cakes
- pour cake and how ever much eggs and oil the mix calls for, in a bowl. But omit water (for now)
- add pumpkin and 1 cup of water and mix with a electric had beater at medium speed for 2 min or with a whisk for 2 min. Making sure every thing is well mixed together.
You may add more water if batter looks dry, but no more than what the mix requares.
- Poor into paper lined cupcake pan(s)
Bake @ 350 degrees for 15-25 min or until cupcakes are done.
- Let cool completely. Then frost with whipped cream cheese frosting.
