These simple, moist, delicious bars will fill your home with the smells of fall baking! They are perfect for breakfast or dessert, with or without the frosting!

Ingredients

  • CAKE BARS
  • 4 - eggs
  • 1/2 cup applesauce, unsweetened
  • 1/2 cup canola oil
  • 15 ounces pumpkin, canned
  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon pumpkin pie spice (more if you'd like)
  • FROSTING
  • 6 ounces cream cheese, room temperature
  • 6 tablespoons butter, room temperature
  • 1 teaspoon milk
  • 1 teaspoon vanilla
  • 3 cups powdered sugar

How To Make pumpkin cake bars w/ cream cheese frosting

  • Step 1
    Preheat oven to 350 degrees. Lightly grease jelly roll pan. Set aside.
  • Step 2
    Beat first 4 ingredients to combine. Mix together dry and add to the wet, stirring to thoroughly combine. Pour into prepared pan. Bake 25-30 minutes.
  • Step 3
    While baking, beat all frosting ingredients together. If you desire a thinner frosting, reduce the cream cheese to 4oz and the powdered sugar to 2 cups. Frost cake when slightly warm, and enjoy!!
