Ingredients

  • 4 - eggs
  • 2 cups sugar
  • 2 cups pumpkin, cooked
  • 1 cup oil
  • 3 cups all purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 cup nuts

How To Make pumpkin cake

  • Step 1
    In the food processor, combine the eggs and sugar until smooth.
  • Step 2
    Add the flour, baking powder, baking soda, salt, cinnamon and raisins or nuts.
  • Step 3
    Stir in the cooked and mashed pumpkin.
  • Step 4
    Turn the batter into two round cake molds, greased and lightly floured; bake in a preheated oven at 350 for 40 minutes.
  • Step 5
    Unmold and stack the cakes, and ice with an orange - tinted frosting.
  • Step 6
    NOTE: May substitute raisins for nuts in this recipe.
