Sonna, a teacher's aide at Woodham High School, used to bake this cake for us at Thanksgiving every year. It's easy and oh, so very good! Of course, I like almost any cake with cream cheese frosting, and this one has it.

Ingredients

  • 4
    eggs
  • 2 c
    sifted all-purpose flour
  • 2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 tsp
    cinnamon
  • 1/2 tsp
    ginger
  • 1/4 tsp
    nutmeg
  • 2 c
    granulated sugar
  • 1 c
    vegetable oil
  • 1 can(s)
    (15-oz.) pumpkin (not pumpkin pie mix!)
  • CREAM CHEESE FROSTING

  • 1 pkg
    8-oz. cream cheese, softened
  • 3 c
    sifted confectioners' sugar
  • 1 tsp
    vanilla extract
  • 1 c
    chopped pecans

How to Make Pumpkin Cake

Step-by-Step

  1. Sift all dry ingredients together.
  2. Beat eggs with sugar until fluffy. Add oil, then pumpkin.
  3. Add sifted dry ingredients and stir just until mixed.
  4. Bake in a greased and floured tube pan at 350 for about an hour.
  5. You can also bake this cake in layers. They'll take less time. Since I've never baked it in layers, I don't know exactly how long, though.
  6. Cream Cheese Frosting: Mix all ingredients together with an electric mixer and spread all over cake.
