Sonna, a teacher's aide at Woodham High School, used to bake this cake for us at Thanksgiving every year. It's easy and oh, so very good! Of course, I like almost any cake with cream cheese frosting, and this one has it.

Ingredients

  • 4 - eggs
  • 2 cups sifted all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 1 can (15-oz.) pumpkin (not pumpkin pie mix!)
  • CREAM CHEESE FROSTING
  • 1 package 8-oz. cream cheese, softened
  • 3 cups sifted confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

How To Make pumpkin cake

  • Step 1
    Sift all dry ingredients together.
  • Step 2
    Beat eggs with sugar until fluffy. Add oil, then pumpkin.
  • Step 3
    Add sifted dry ingredients and stir just until mixed.
  • Step 4
    Bake in a greased and floured tube pan at 350 for about an hour.
  • Step 5
    You can also bake this cake in layers. They'll take less time. Since I've never baked it in layers, I don't know exactly how long, though.
  • Step 6
    Cream Cheese Frosting: Mix all ingredients together with an electric mixer and spread all over cake.
