pumpkin cake

Sonna, a teacher's aide at Woodham High School, used to bake this cake for us at Thanksgiving every year. It's easy and oh, so very good! Of course, I like almost any cake with cream cheese frosting, and this one has it.

Ingredients
- 4 - eggs
- 2 cups sifted all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- 2 cups granulated sugar
- 1 cup vegetable oil
- 1 can (15-oz.) pumpkin (not pumpkin pie mix!)
- CREAM CHEESE FROSTING
- 1 package 8-oz. cream cheese, softened
- 3 cups sifted confectioners' sugar
- 1 teaspoon vanilla extract
- 1 cup chopped pecans

Step 1Sift all dry ingredients together.

Step 2Beat eggs with sugar until fluffy. Add oil, then pumpkin.

Step 3Add sifted dry ingredients and stir just until mixed.

Step 4Bake in a greased and floured tube pan at 350 for about an hour.

Step 5You can also bake this cake in layers. They'll take less time. Since I've never baked it in layers, I don't know exactly how long, though.

Step 6Cream Cheese Frosting: Mix all ingredients together with an electric mixer and spread all over cake.
