I started with an incomplete recipe and came out with an AWESOME Cake!

Ingredients

  • 1 can (15oz) pumpkin
  • 1 can evaporated milk
  • 1/2 cup sugar
  • 4 - eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1 box yellow or spice cake mix
  • 1 cup chopped pecans
  • 1 stick butter, melted

How To Make pumpkin cake

  • Step 1
    Preheat oven 350 degrees. Grease a 13x9 cake pan.
  • Step 2
    In large mixing bowl add pumpkin, milk, eggs, sugar,vanilla and salt. Mix well for 2 minutes medium speed.Pour in cake pan.
  • Step 3
    In another bowl with melted butter add cake mix and nuts. I start out adding 1/3 cake mix and 1/3 nuts and stir. I repeat this till its all mixed and crumbly. Evenly top pumpkin mixture. Don't be alarmed since topping is heavy it tends to sink into pumpkin.
  • Step 4
    Bake at 350 degrees for 1 hour. Warm or cold if you like pumpkin you will certainly enjoy this!
