This pumpkin quick bread improves with age. Make a few loaves, eat one, freeze the others. Makes a wonderful Christmas gift!

Ingredients

  • 2 cups white sugar
  • 1 cup brown sugar
  • 3 1/2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 15 ounces pumpkin puree
  • 1 cup vegetable oil
  • 4 - eggs
  • 2/3 cup water
  • 1/2 cup raisins (or dried cranberries)
  • 1/2 cup walnuts (chopped)

How To Make pumpkin bread ll

  • Step 1
    Grease and flour three 7 x 3 loaf pans. Preheat oven to 350F. In a large mixing bowl, whisk the dry ingredients; flour, soda, salt, nutmeg, ginger, cinnamon, and cloves.
  • Step 2
    In a separate mixing bowl, mix together pumpkin, eggs, oil, water, and sugars, until well blended. Stir the dry ingredients into the pumpkin mixture just until blended. Fold in raisins and nuts. Pour into prepared loaf pans.
  • Step 3
    Bake for 50-60 minutes or until toothpick inserted in the middle of loaf comes out clean.
