This is my mother's recipe and is rather delicious! Not too sweet, and perfect for the Fall time of year. Enjoy!

Ingredients

  • 4
    eggs
  • 2 c
    sugar
  • 1 c
    vegetable oil
  • 15 oz
    pumpkin, canned or cooked
  • MIX THE ABOVE INGREDIENTS IN LARGE BOWL. SIFT THE FOLLOWING & ADD TO ABOVE, STIR

  • 2 c
    flour
  • 1/2 tsp
    salt
  • 1/2 tsp
    cloves
  • 2 tsp
    baking powder
  • 2 tsp
    cinnamon
  • 1/2 tsp
    nutmeg
  • 1/2 tsp
    ginger
  • 1 tsp
    baking soda
  • BAKE AT 350 FOR 25 MINUTES IN 9X13 CAKE PAN

  • FROSTING:

  • 6 oz
    cream cheese, softened
  • 1 tsp
    vanilla
  • 3/4 stick
    butter, softened
  • 4 c
    powdered sugar

How to Make Pumpkin Bars

Step-by-Step

  1. Mix first 4 ingredients in large bowl.
  2. Sift the next 8 ingredients and add to the above, stir.
  3. Bake at 350 for 25 minutes in 9x13 cake pan.
  4. Mix the last 4 ingredients with mixer in bowl. Use to frost cooled pumpkin cake.
