This is my mother's recipe and is rather delicious! Not too sweet, and perfect for the Fall time of year. Enjoy!

Ingredients

  • 4 - eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 15 ounces pumpkin, canned or cooked
  • MIX THE ABOVE INGREDIENTS IN LARGE BOWL. SIFT THE FOLLOWING & ADD TO ABOVE, STIR
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon cloves
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 teaspoon baking soda
  • BAKE AT 350 FOR 25 MINUTES IN 9X13 CAKE PAN
  • FROSTING:
  • 6 ounces cream cheese, softened
  • 1 teaspoon vanilla
  • 3/4 stick butter, softened
  • 4 cups powdered sugar

How To Make pumpkin bars

  • Step 1
    Mix first 4 ingredients in large bowl.
  • Step 2
    Sift the next 8 ingredients and add to the above, stir.
  • Step 3
    Bake at 350 for 25 minutes in 9x13 cake pan.
  • Step 4
    Mix the last 4 ingredients with mixer in bowl. Use to frost cooled pumpkin cake.
