This is a favorite of my family and co-workers! I like to make this during the holidays, but I get requests for it all year long. Very moist, very yummy. I've had this recipe for years, I do not remember where I got it from.

Ingredients

  • PUMPKIN BARS
  • 2 cups sugar
  • 1 cup oil
  • 4 - eggs
  • 1 16 oz cans pumpkin, canned or cooked
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon real vanilla
  • FROSTING
  • 3 cups powdered sugar
  • 1 8oz packages cream cheese
  • 1 stick butter, softened
  • 1 teaspoon real vanilla
  • 2 tablespoons milk

How To Make pumpkin bars

  • Step 1
    PUMPKIN BARS Cream sugar and oil together in a good size-mixing bowl. Add eggs and mix well. Gradually add the flour and mix well. Add rest of ingredients, mix well. Spread on a jellyroll pan. Bake 20-25 mins at 350. Use toothpick to make sure it’s done, as oven temps vary! Cool completely and frost.
  • Step 2
    FROSTING: Cream the cream cheese and the margarine together. Gradually add the powered sugar mixing well. Add the rest of the ingredients, mix well.
