If you are planning a Halloween Party or will be going to friends for fall activities then this recipe will work well for you. It makes 48 bars. They're rich so a little goes a long way. This is a favorite around here and has been since the boys were young. Now they're older and out of the house so I guess I'll have to eat all 48 myself.

Ingredients For pumpkin bars

  • 1 boxed pound cake mix
  • 3 large eggs
  • 2 tablespoon melted butter
  • 4 teaspoons pumpkin pie spice, divided (this is the name of a spice found in the spice aisle)
  • 8 oz. cream cheese room temperature
  • 14 oz. sweetened condensed milk
  • 2 cup canned pumpkin (not pie filling)
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts or pecans or toffee bits

    In large bowl, combine pound cake mix, 1 egg, butter and 2 teaspoons of the pumpkin pie spice. Use hands to mix all together to make a crumbly coarse mixture. Press this all into a greased cookie sheet (15x10.

    Next in large bowl, beat the cream cheese until fluffy.Gradually beat in condensed milk, the remaining 2 eggs, pumpkin and remaining pumpkin pie spice, and the salt. Mix well. Pour over crust mixture. Sprinkle with nuts. Bake 350 degrees for 30-35 minutes. Don't overbake. Bake until set using a toothpick for doneness. Cool completely and cut into 48 bars. Store in fridge when not using.

    NOTE: It would be good with 1/2 cup chocolate chips sprinkled in with the 1 cup chopped nuts. I believe chocolate slows down the age processing. I mean, there's no proof of this but why take chances? {:
