Ingredients

4eggs

1 /2/3sugar

1 cvegetable oil (or 1/2 cup applesauce for half the oil)

1 can(s)solid pumpkin
-
2 cflour
-
2 tspbaking powder
-
1 tspbaking soda
-
2 tspcinnamon
-
1/2 tspnutmeg
-
1 tspsalt
-
1 1/2 cfresh apples,peeled,chopped and diced(fuji or gala)

CREAM CHEESE FROSTING
-
8ounce cream cheese (softened)
-
1/2 cbutter, room tempetature
-
2 cpowdered sugar
-
1 Tbspcinnamon
-
1 Tbspvanilla extract
How to Make PUMPKIN APPLE BARS
- Peel chop and dice apples and set aside. Mix eggs,sugar,oiland pumpkin well with electric mixer,til light and fluffy.
- Stir together dry ingredients,flour,baking powder,soda,cinnamon,nutmeg and salt.Now add 2 Tablespoon of flour mixture to fresh diced and chopped apples. Toss very well. Set aside the apples.
- Add all the dry ingredients to the pumpkin mixture. Mix on Low speed til batter is smooth and well blended. Now you can add the floured apples and stir well to blend.
- Pour you batter evenly into greased 10 x 9 pan. Bake at 350 degrees for 30 minutes. Let cool completely, before frosting frost with cream cheese frosting cut into 2 x 3 bars and enjoy.
