My grandmother always made this icing and put it on an angel food cake for my father who was diabetic. It is low sugar, super easy and great for a little something cold but sweet on a hot summer day. Butterscotch is my personal favorite

Ingredients
- 1 box sugar free instant pudding
- 1 cup milk
- 8 ounces cool whip (thawed)
- 1 box cake mix, any flavor
How To Make pudding icing

Step 1Mix and bake cake mix as directed on box, cool completely

Step 2In a medium to large bowl (need enough room for cool whip) mix the pudding with only 1 cup of milk and put it in fridge to set up

Step 3Combine 8 oz cool whip with pudding

Step 4Ice cake (or cupcakes) with pudding icing. Iced cake must be stored in the fridge!
