Before you wrinkle up your nose, listen to me... ALL of the MEN and ladies at the Jaycee's party gobbled down this very tasty cake before we could tell them what it was made out of!! You should have seen their faces of disbelief when they were told!! Wish I had a camera :)) So just keep the name a secret, shh, between you and me!

Ingredients For prune cake--lyn*

  • 1 c
    prunes, pitted, soaked overnight, then cook 20 minutes; cool
  • 1 c
    sugar
  • 1/2 c
    oil
  • 2
    eggs
  • 3/4 c
    sour milk add 4 tsp cidar vinegar
  • 2 c
    (minus 3 tbsp) flour
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/4 tsp
    cinnamon
  • 1/4 tsp
    nutmeg
  • 1/4 tsp
    cloves
  • 1/4 tsp
    allspice
  • 1 tsp
    pure vanilla extract

How To Make prune cake--lyn*

    Heat oven 350. Bake 35 to 45 minutes. Grease and flour 2 cake pans.

    Drain prunes (saving 1 Tbsp juice); chop VERY fine.

    In a large mixing bowl, beat sugar, oil, eggs, vanilla; add prunes with reserved 1 Tbsp, juice, stir; set aside.

    Mix together well dry ingredients. Add to sugar mixture. stir until well blended. Pour into baking pans and Bake 35 to 45 minutes until done.

    Cool on wire racks. FROST with cream cheese frosting.
