This old-fashioned potato cake is dense but fluffy at the same time. It has a rich chocolate flavor. Cinnamon, nutmeg, and cloves add a spice to the cake. We sprinkled powdered sugar when serving. No one will guess it's made with mashed potatoes. This recipe is a good way to reinvent leftovers.

Ingredients
- 2 cups granulated sugar
- 3/4 cup butter or margarine
- 4 large eggs, separated
- 1/2 cup milk
- 1 cup cocoa powder
- 1 cup hot mashed potatoes
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cloves
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup walnut pieces
How To Make potato cake

Step 1Preheat the oven to 350 degrees F. Cream the butter and sugar. Add the egg yolks and milk. Beat.

Step 2Add in the cocoa and hot mashed potatoes.

Step 3Add the flour, baking powder, spices, and salt. Beat until combined.

Step 4Fold in the nuts.

Step 5In a separate bowl, beat the egg whites until peaks form.

Step 6Fold egg whites into the batter.

Step 7Spread in a 9x13 pan and bake at 350 degrees F for 35 minutes.
