Another strange old recipe from my grandmother. I used to love this cake.

Blue Ribbon Recipe

This old-fashioned potato cake is dense but fluffy at the same time. It has a rich chocolate flavor. Cinnamon, nutmeg, and cloves add a spice to the cake. We sprinkled powdered sugar when serving. No one will guess it's made with mashed potatoes. This recipe is a good way to reinvent leftovers.

Ingredients

  • 2 cups granulated sugar
  • 3/4 cup butter or margarine
  • 4 large eggs, separated
  • 1/2 cup milk
  • 1 cup cocoa powder
  • 1 cup hot mashed potatoes
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cloves
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup walnut pieces

How To Make potato cake

  • Add egg yolks and milk to creamed butter and sugar.
    Step 1
    Preheat the oven to 350 degrees F. Cream the butter and sugar. Add the egg yolks and milk. Beat.
  • Mix in hot mashed potatoes and cocoa powder.
    Step 2
    Add in the cocoa and hot mashed potatoes.
  • Add flour, spices, baking powder, and salt.
    Step 3
    Add the flour, baking powder, spices, and salt. Beat until combined.
  • Fold in nuts.
    Step 4
    Fold in the nuts.
  • Beat egg whites until peaks form.
    Step 5
    In a separate bowl, beat the egg whites until peaks form.
  • Fold egg whites into the batter.
    Step 6

  • Pour batter into a pan and bake.

    Spread in a 9x13 pan and bake at 350 degrees F for 35 minutes.
