  • 12
    small fresh plums, peeled and pitted
  • 1/2 c
    brown sugar, packed
  • 1/4 c
    butter, melted
  • 1 c
    all-purpose flour
  • 1/2 c
    granulated sugar
  • 2
  • 1/4 tsp
  • 1/2 tsp
    baking powder
  • 1/4 c
  • 1 tsp
    fresh lemon zest
  • 1 tsp
    lemon extract, or lemon juice
  • 2 tsp
    almond extract

How to Make Plum Upside Down Cake


  1. Preheat oven to 350*.
  2. Mix together brown sugar and melted butter. Spread into the bottom of a 9" cake pan. Place plum pieces on top of brown sugar mixture.
  3. Beat eggs and granulated sugar until thick and lemon colored. Add milk, lemon zest, and both extracts.
  4. In a second bowl mix together dry ingredients. Add to egg mixture. Mix well.
  5. Pour batter over plums.
  6. Bake 30-35 minutes until browned and a toothpick inserted in the center is removed clean.
  7. Let cool 5-10 minutes and invert onto a plate.
