Who would have thought we would be eating baby food as adults??? You have to try this to believe how good it is. My niece, Kristen, gave me this recipe when she was a little girl. She wrote it out for me :-)

Ingredients
- 2 cups self rising flour
- 2 cups sugar
- 1 cup vegetable oil
- 3 - eggs
- 2 jars baby food plums (small jars)
- 1 cup chopped nuts (i use pecans)
- 8 ounces cream cheese-softened
- 2 tablespoons butter
- 1 box powdered sugar
- 1 teaspoon vanilla extract
- PREHEAT OVEN 325 DEGREES
How To Make plum pound cake

Step 1Mix together flour, sugar and oil using an electric mixer. Add eggs, baby food and nuts, mixing well. Pour into a tube pan. Bake at 325 degrees for 1 hour. Let cake cool completely.

Step 2Make the icing by mixing cream cheese and butter until smooth using an electric mixer. Slowly add the powdered sugar and vanilla. Ice the cake.

Step 3**Note** may add some red food coloring to make the cake more vibrant.
