Ok, I came up with this recipe last night.My 3 year old daughter wanted green pie(pistachio pudding pie) and my Hubby wanted cheesecake,so I thought,why not combine the two.WOW!! I am so glad that I did,it turned out amazing.As of this morning,there was about 1/4 of it left.My baby girl even had to have some for breakfast,lol I hope everyone enjoys this one :)

Ingredients

  • 3 cups cookie crumbs,any kind you like
  • 1/2 cup butter
  • 2 8 oz. packages cream cheese
  • 1 8oz. - container sour cream
  • 1 8oz. - container cool whip
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 1 3.4 oz. packages pistachio pudding
  • 1 1/2 cups milk

How To Make pistachio cheesecake

  • Step 1
    Mix cookie crumbs in 13x9 inch casserole dish with melted butter.Press crumbs into bottom of bowl with fingers or the back a spoon.Set aside.
  • Step 2
    Combine cream cheese,vanilla and sugar in large mixing bowl,beat on high for about 2 minutes.Add sour cream and blend well.
  • Step 3
    Fold in cool whip slowly,by hand(do not use mixer).Place in refrigerator to start the chilling process.
  • Step 4
    In another bowl, add pistachio pudding and cold milk,blending well.Place this bowl in refrigerator so pudding will set up, about 20 minutes.
  • Step 5
    When pudding has set, fold into cream cheese mixture,again,by hand.Pour over crust and allow to chill for 1 1/2 to 2 hours.Serve with a dollop of cool whip and enjoy :)
