This is a southern recipe ,if you like a spice cake ,maybe you will like this one . you can not see ,or taste the beans,it's one of my Mom's favorite cakes .

Ingredients

  • 1 cup sugar
  • 1/4 cup butter
  • 1 - egg
  • 2 cups cooked pinto beans , mashed
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 cup rasins
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground allspices
  • 1/2 cup chopped pecans
  • 2 cups diced apples ( peeled)
  • 1 - stick butter
  • 1 cup brown sugar , firmly packed
  • 1/4 cup milk
  • 2 cups powered sugar , well sifted

How To Make pinto bean cake

  • Step 1
    Preheat oven to 375 % . Grease 2 , 8 inch round ( or ) square pans .
  • Step 2
    Cream butter and sugar together . Add the beaten egg and mix well .Stir in the mashed cooked beans and vanilla .
  • Step 3
    Sift the flour , baking soda , salt , cinnamon , cloves , and allspice together .Add the chopped pecans , raisins , and the diced apples to the flour mixture . Stir to coat . Pour flour mixture into the creamed mixture and stir until mixed well . Pour batter into prepared pans .
  • Step 4
    Bake at 375 % for 45 minutes .Let cool .
  • Step 5
    Melt the butter over low heat , in a saucepan . Add the brown sugar , and milk , bring to a boil and remove from heat .Let cool .
  • Step 6
    Add the powdered sugar , and mix until well blended .
  • Step 7
    frost bottom layer , place other layer on top . and frost top and sides .
