pineapple walnut cake

This is a very "sticky" coffee cake but really good. I make it for Sunday brunch.

Ingredients

  • 2 cups all purpose flour
  • 2 cups granulated sugar
  • 2 teaspoons baking soda
  • 1 cup walnuts
  • 2 - eggs
  • 1 can 20-oz can of crushed pinneaple (un-drained)
  • FROSTING
  • 1 package 8-oz of cream cheese
  • 1 stick 4-oz margarine
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

How To Make pineapple walnut cake

  • Step 1
    Preheat the oven to 350, sift together the dry ingredients, and add walnuts, eggs and the entire content of the pineapple can.
  • Step 2
    Stir only until the ingredients are wet.
  • Step 3
    Pour into an un-greased 9x13-inch pan & bake until golden brown (35-40 min).
  • Step 4
    While the cake is baking, cream together the frosting ingredients in a food processor (or a good mixer as long as the margarine and cream cheese are almost room temperature).
  • Step 5
    Let the cake cool for only 10 minutes and then spread the frosting on while the cake is still warm and in the baking pan.
