How to Make Pineapple Upside Down Cake
- Use a 9 or 10 inch cast iron skillet and melt a stick of butter. Add brown sugar and stir till dissolved. Add crushed pineapple (drained)
- Sift flour & baking powder. Beat together the egg yolks and add melted butter, sugar & vanilla.
- In a seperate bowl beat egg whites till stiff but not dry. Fold in the sugar 1 Tbls at a time, then add the yolk mixture and finally the flour 1 Tbls at a time.
- Pour the batter over the pineapple mixture and bake for 1/2 hr at 325 degrees.
When done, flip over on a plate immediately.
