Ingredients
- 2 tablespoons butter
- 1/2 cup brown sugar, firmly packed
- 1 can sliced pineapple, drained (20 oz)
- 3 large eggs, separated
- 1 1/2 cups sugar, divided
- 1 1/2 cups cake flour, sifted
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup boiling water
How To Make pineapple upside-down cake

Step 1Preheat the oven to 350 degrees F. Melt butter in a 10-inch cast iron skillet over low heat. Sprinkle the brown sugar evenly over the melted butter in the skillet. Remove from the heat. Arrange the pineapple slices in a single layer over the brown sugar mixture; set aside.

Step 2Beat the egg yolks at medium speed of an electric mixer until thick and pale. Gradually add 1/2 cup sugar, beating well.

Step 3Combine the flour and remaining cup of sugar, baking powder, and salt. Add to the egg mixture alternately with boiling water, beginning and ending with the flour mixture. Mix after each addition.

Step 4Beat egg whites at high speed until swift peaks form. Gently fold into the batter.

Step 5Spoon the batter evenly over the pineapple in the skillet. Bake for 45 minutes. Immediately invert the cake onto a serving plate. Let cool.
