I got this recipe when I was a freshman in HS in Warner Robins, GA. In those days, most girls took home ec. This is one of my favorite recipes from that class.

Ingredients

3
eggs
1 c
sugar
1 stick
butter
1/2 c
milk
2 c
all purpose flour
1 tsp
baking powder
1 tsp
vanilla

TOPPING

brown sugar, enough to cover bottom of skillet
butter, thin slices scattered over brown sugar
pineapple, slices, drained (reserve juice)
maraschino cherries, enough for 1 per pineapple slice

How to Make Pineapple Upside Down Cake

Step-by-Step

  • 1Put brown sugar in bottom of iron skillet, place thin slices of butter over sugar, moisten with pineapple juice.
  • 2Place pineapple slices in pan, place maraschino cherry in hole of each pineapple ring.
  • 3Make batter as for any cake. Pour over pineapple/cherry/brown sugar.
  • 4Bake for 1 hr at 250 degrees.
