pineapple upside down cake

I got this recipe when I was a freshman in HS in Warner Robins, GA. In those days, most girls took home ec. This is one of my favorite recipes from that class.

Ingredients

  • 3 - eggs
  • 1 cup sugar
  • 1 stick butter
  • 1/2 cup milk
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • TOPPING
  • - brown sugar, enough to cover bottom of skillet
  • - butter, thin slices scattered over brown sugar
  • - pineapple, slices, drained (reserve juice)
  • - maraschino cherries, enough for 1 per pineapple slice

How To Make pineapple upside down cake

  • Step 1
    Put brown sugar in bottom of iron skillet, place thin slices of butter over sugar, moisten with pineapple juice.
  • Step 2
    Place pineapple slices in pan, place maraschino cherry in hole of each pineapple ring.
  • Step 3
    Make batter as for any cake. Pour over pineapple/cherry/brown sugar.
  • Step 4
    Bake for 1 hr at 250 degrees.
