I got this recipe when I was a freshman in HS in Warner Robins, GA. In those days, most girls took home ec. This is one of my favorite recipes from that class.

Ingredients For pineapple upside down cake

  • 3
    eggs
  • 1 c
    sugar
  • 1 stick
    butter
  • 1/2 c
    milk
  • 2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1 tsp
    vanilla
  • TOPPING
  • brown sugar, enough to cover bottom of skillet
  • butter, thin slices scattered over brown sugar
  • pineapple, slices, drained (reserve juice)
  • maraschino cherries, enough for 1 per pineapple slice

How To Make pineapple upside down cake

  • 1
    Put brown sugar in bottom of iron skillet, place thin slices of butter over sugar, moisten with pineapple juice.

    Place pineapple slices in pan, place maraschino cherry in hole of each pineapple ring.

    Make batter as for any cake. Pour over pineapple/cherry/brown sugar.

    Bake for 1 hr at 250 degrees.
